Thank God For Brunch!

Hey family! So I am not sure about you, but I LOVE Brunch! There is something about sitting together with family or friends enjoying great conversation and even better food. It has become the alternative to going out to the club to "turn up". With that being said, going for brunch has become a little of a challenge since going plant based unless it is a strictly vegan spot. A few days ago, I wanted to find a way to incorporate one of my favorite parts of brunch back into my life, an Omelet! So here's my rendition:
Ingredients:
1 1/2 cups of chickpea flour
3 Tbs. of nutritional yeast
3 Tbs. of ground flax seed
1 1/2 tsp. of baking powder
Turmeric (to taste)
Cumin (to taste)
Salt (to taste)
Black pepper (to taste)
Vegan cheese (to taste)
Water
*Your choice of vegetables*
Directions:
1. Mix all the dry ingredients and seal the container tightly
2. Mix heaping 1/3 cup of the mix with 1/3 cup of water stirring well
3. Cook whatever vegetables you would like, but no more than a 1/2 of a cup because the omelets start out small
4. Heat a non-stick skillet on medium high heat. Pour half of the batter and spread it evenly in a circle. Keep it thin like a pancake and add the veggies with your cheese on top
5. Make sure you cook it thoroughly flipping it multiple times and even flattening it if needed
6. Two omelets should come from this so increase the amount based on preference.
Add in some oven roasted potatoes, fruits and of course the mimosas!
