Good Ole Macaroni

Hey family! So there is only one thing that I can truly say I have been missing extremely since becoming vegan and that would be "good ole' macaroni". I don't mean that fake kraft mess, I mean that ooey gooey oh so yummy southern macaroni. You know the kind that has that beautiful thick layer or cheese on top. Well after multiple failed attempts to find my good replacement, I was about to give up. Finally, I found an amazing recipe from Donna Green-Goodman, MPH thanks to a Black Vegan facebook page. This lady is the truth! Plus she is from Huntsville Alabama, so she knows her stuff. She created "cookin' up good health holiday recipes " to help us have our soul food, but also bless our soul with good health! Ingredients:
1- box of generic elbows (or like 16 oz)
1- block of follow your heart vegan cheddar cheese (grated)
1- package of go veggie mozzarella (grated)
1-package of follow your heart vegan cheddar cheese (grated)
2 cups of your choice of non-dairy milk (almond)
2- Tbs. of vegan butter (Earth balance)
1- Tbs. of tofutti sour cream
1- Tbs. of lemon juice
1/4 cup of flour
1/4 cup of nutritional yeast
1/2 of a Not chickin bouillon cube
Garlic powder (to taste)
Onion powder (to taste)
Turmeric (to taste)
Sugar (to taste)
Black pepper (to taste)
Salt (to taste)
Directions:
1. Make the macaroni as directed. Drain and place them back into your boiler. Immediately add the butter.
2. In a large bowl, mix together all of the cheeses evenly.
3. Add 3/4 of your cheese mix plus your sour cream into the boiler with the macaroni. Mix well and let the heat from the macaroni melt the cheese.
4. Add the nutritional yeast, flour, lemon juice, and milk.
5. Add in the seasoning to taste
6. Add the last 1/4 remaining cheese to the top for your perfect top cheese layer
7. Transfer it to a casserole dish and heat covered on 350 F for 30 minutes (or 400 for 20 minutes)
7. Uncover and turn on the broiler to get that golden brown look (Stay close because this process only takes like five minutes)
