Zucchini Brownies with Pecans

When I was first learning to cook, baking was my favorite past time. When I became a vegan, I strayed away from sweets for a while, but lately I've been craving it! So, I decided to make brownies, but not just regular brownies, zucchini brownies! Here you go: Ingredients: 2 cups of your choice of flour 1/2 cup of cocoa powder 1 1/2 tsp. of baking soda 1 tsp. of salt 1/2 cup of vegetable oil 1 1/4 cup of sugar 2 tsp. of vanilla extract 2 cups of zucchini shredded 1/2 cup of your choice of nuts (optional) 1/2 cup of chocolate chips (optional) Directions: 1. Preheat the oven to 350 degrees and spray baking pan with coconut spray 2. Combine oil, sugar, and vanilla extract in a bowl and mix together until it has a crumbly texture 3. Combine flour, cocoa powder, baking soda, and salt in a separate bowl and mix well 4. Combine sugar and flour mixtures 5. Shred the zucchini (I used a food processor ) 6. Stir zucchini into the mixture and it should be a thick, but moist texture 7. Place mixture in baking pan 8. Bake for approx. 30 minutes or until it comes out clean using a toothpick 9. Let it cool for 5 minutes Enjoy!
